Grilled Cheese & Tomato Soup By Chief Kate

  • Tomato Soup

  • 3 tbsp. olive oil, butter or vegan butter
  • 1 onion, coarsely chopped
  • 1 clove garlic finely chopped (optional)
  • 2 cans (approx. 400gm each) whole peeled tomatoes
  • 1 cups veggie broth, chicken broth or chicken bone broth
  • 1 – 2 drops Cilantro essential oil (to taste)
  • 1 tbsp maple syrup, honey or coconut sugar (to taste)
  • 1 tsp sea salt and freshly ground black pepper (to taste)
  • fresh cilantro (coriander) leaves (optional for serving)

  • Grilled Cheese
  • 8 slices bread of choice
  • Mayonnaise, vegan mayonnaise or softened butter (for spreading on the bread)
  • 1 – 1½ cups shredded cheddar and/or mozzarella cheese or slices (or 2 slices per sandwich)
  • 2 – 3 tbsp. butter, olive oil or vegan butter (for cooking)

  • Tomato Soup

  • 1. In a large soup pot on medium-heat, add the olive oil and onions. Cook for 5 minutes stirring often. Add the garlic, stir and then add the canned tomatoes with their juices. Using a potato masher or large spoon break up the tomatoes into large chunks
  • 2. Pour in the broth and bring the heat to high until the soup starts to simmer. Reduce the heat to medium-low, cover the pot and simmer for approx. 15 – 20 minutes. Stir the soup every few minutes and continue cooking until the onion is soft and the tomatoes have broken down.

  • 3. Once the soup is done you can carefully blend some or all of the soup with a stick blender depending on how chunky you like it. You may need to add a little more broth or water if the soup is a little too thick for your liking. While the soup is cooking, make the sandwiches.

  • Grilled Cheese
  • 1. Spread a thin layer of mayonnaise (or softened butter/vegan butter) on one side of each slice of bread. Then evenly sprinkle the shredded cheese (or place 2 slices of cheese) on the mayonnaise side of the 4 slices. Place the remaining 4 slices on top of each cheese covered slice with the mayonnaise side down and press gently on each sandwich to help them stick together.

  • 2. In a large frying pan or on a griddle, melt 2 tbsp. of butter on medium heat. Gently place the sandwiches in the pan being careful that the cheese stays in place. Cook on one side for 2 – 3 minutes until the bottoms are golden brown.

  • 3. Melt the remaining 1 tbsp of butter in the pan and carefully turn the sandwiches over with a spatula moving them around a little to coat them with the butter. Add more butter if desired. Cook for approx. 1 – 2 minutes longer until the other side is golden brown, and the cheese has melted. Turn heat to lowest setting to keep sandwiches warm until ready to serve.

  • 4. Taste the soup and add a little more sea salt and pepper if desired and serve the soup in bowls. Garnish with a few cilantro (coriander) leaves, if you like. Set the bowls on plates. Place the sandwiches on a cutting board and cut then in quarters or diagonally and set them on the plates with the soup and serve immediately.

What a better way to warm-up then a hot cup of soup and the Fire Ball NingXia Red Beverage.

Make sure you follow the directions of your NingXia Red to get the right kick!

Pumpkin Recipes Young Living Style

How to make your own Pumpkin Puree and Pumpkin Butter
Lets start cooking!

I'm going to share my recipe on how to make pumpkin puree and caramelized pumpkin butter with you, it is so good you will never let another pumpkin go to waste. You can use the Caramelized Pumpkin Butter on any thing. Pancakes, Waffles, Rolls, Ice Cream topping, or make a pumpkin pie out of it.   It's makes a special desert anything it touches!

You start out preparing your pumpkin so you can bake it.  Wash the pumpkin with Thieves Veggie Spray, then split it in half and clean out the insides. If you wish you can save the seeds and roast them later.

Roasting pumpkin is amazingly easy and simple. All you need to roast a pumpkin is a baking sheet and a pumpkin. If you want even less clean-up, you can use parchment paper to protect the baking sheet. Roasting a pumpkin also adds extra depth to the flavor of the pumpkin and, in my opinion, makes it a little sweeter and richer.

Here are the easy steps for how to roast a pumpkin:
  1. Preheat oven to 375 degrees.
  2. Slice the pumpkin in half, crosswise through the stem, and scoop out the seeds and strings. Feel free to keep the seeds for later to roast.
  3. Place halves, cut-side down, onto a baking sheet lined with parchment paper.
  4. Roast, uncovered, for 40-60 minutes, or until tender.
Once you have the pumpkin roasted and cooked through, it’s time to turn it into pumpkin puree.
Scoop the pumpkin out of it's shell.  Cooked pumpkin is already very soft and can be mashed by hand using a potato masher or fork to turn into a puree, if you want to.
But I prefer to use a food processor, or kitchen blender, to get it as smooth as possible.  There’s really no way to puree the pumpkin too much – it’s just a matter of how smooth you want to make it.
If you aren’t using your fresh pumpkin puree right away, you can either store it in the fridge or freeze it. Refrigerated leftover pumpkin puree will last about 4-6 days in the refrigerator, if kept in an airtight container. I like to keep some on hand during the fall to add to pumpkin spice lattespumpkin cheesecake smoothies, or to top my plain Greek yogurt.

Yes you can, freeze pumpkin puree in freezer safe containers or freezer-safe plastic bags. Frozen pumpkin puree will last for 3-4 months if stored correctly. To defrost the pumpkin puree, you can thaw overnight in the refrigerator or in a bowl of cold water. Use thawed pumpkin puree within a few days for the best flavor.

What can you use your pumpkin puree for?  You can use it for pies etc. but I make Caramelized Pumpkin Butter out of it because you can use it for everything.  If bottled, you can store it longer canned, if it last that long because you will use it for everything!

ο»Ώ You’ll be so surprised in how awesome it tastes. Something you will do every fall instead of throwing the pumpkins away!

9 cups Pumpkin Puree
·        3 cups(organic brown sugar)
·        2 cup maple syrup
·        1/4 cup Grade A Maple Syrup
·        2 cup pure unsweetened apple juice
·        3 Tbsp. lemon, juiced
·        4 tsp pumpkin pie spice*
·        1 1/2 tsp ground cinnamon 0r 2 drops Vitality Cinnamon Bark Essential Oil*
·        1 tsp sea salt
1 stick of butter

Looking for what to make with pumpkin Butter for ? Homemade Caramelized Pumpkin Butter is really quite simple to do and is absolutely delicious for everything… Great to use like jam on your toast etc.

1.      Add all ingredients to a large saucepan or pot over medium-high heat and stir to combine.

2.      Once it begins bubbling, reduce heat to low and simmer. You’re looking for a frequent bubble, so if there isn’t much going on at the surface, increase heat to medium-low heat. If bubbling too vigorously, reduce heat to low.

3.      Cook, uncovered, for 15-20 minutes, stirring occasionally. This is 20-minute pumpkin butter, but if you have more time, leaving it on the stove for another 5-10 minutes will only deepen the flavors and thicken the texture. However, 20 minutes was just about perfect!

4.      Taste and adjust seasonings as needed, adding more maple syrup for sweetness, lemon juice for acidity, cinnamon or pumpkin pie spice for warmth, or salt to balance the flavors.

Prepare your bottles by sterilizing them to boiling water with a cap full of white vinegar. The vinegar helps keep soften the water if you have hard water the way it won't a film on the outside of the bottles. This kills all germs that may be on the bottles.  Also put the lids in hot water too to get them ready to seal the bottles

5.      Once done,  transfer to pints or quarts jars, and seal them and store it in a cool area . (I do it like I do when making jams or jelly).

6.      Pumpkin butter is a delicious addition to fall goodies like wafflespancakespumpkin breadbutternut squash banana bread, or oatmeal! Enjoy straight from the fridge, or let it warm to room temperature before adding to items like waffles or pancakes.
If you don’t have pumpkin pie spice, use This DIY blend:

2 tsp ground cinnamon,

2 tsp ground ginger,

1 tsp ground nutmeg,

1/2 ground clove.
Start out with half of the mixture and add more to taste. Don't want to over do it.

Or use your Young Living Cinnamon Bark Vitality oil in comparison.

I like to add a drop or two and then taste to make sure its strong enough before adding more. You don’t want to make it to strong. The Essential Oil are highly concentrate which could make your recipe to strong; I would add a drop, stir, taste and add again if necessary.   Every time I add something I stir it in and taste it to see if it needs more or stop right there.

Pumpkin Pie Smoothie
yield: SERVES 1 (LARGE SMOOTHIE) prep time: 5 MINUTES

  • 1/2 cup pure pumpkin puree
  • 1 large banana
  • 6-8 ice cubes
  • 6 oz. vanilla yogurt
  • 1/2 tsp pumpkin pie spice
  • 1 tsp agave  (or honey would work too)
  • 3 Tbsp. milk
  • pinch nutmeg and whipped cream, optional garnish

Or use your Caramelized Pumpkin Butter which is already seasoned and you won't have to season it again, just add the banana, ice cubes, milk and yogurt blend and then garnish on top with Whip Cream and Cinnamon Bark Vitality or Nutmeg Vitality Oil. You don't have to sweeten it if you the Caramelized Pumpkin Butter

  1. In a blender that will crush ice, when done crushing the ice, then combine pumpkin, banana, yogurt, spice, agave nectar and milk. Blend until smooth!
  2. Pour into a glass and top with whipped cream and pinch of nutmeg.

  1. ENJOY!
**If desired, add a scoop of Young Living's Vanilla Pure Proteinbefore blending.

This is so Yummy Yummy Yum

Have fun and enjoy your Creation, Nancy Sanderson

SOUL: Sandy's Oily Update Letter for September 2022

Soul: September 2022 Newsletter

Hello, September!

Anyone else trying to hold onto the last bit of summer? The warm weather, the refreshing dips in the pool, the toasty beaches, the delicious recipes, fun get-togethers… I sure am going to miss it all! But even if summer is fading away, you don’t have to set those oils down. Stay ahead of the game this fall and be proactive about using them daily. With Young Living essential oils, you can apply them topically, diffuse them/use them aromatically, and even ingest them (Vitality line).
Here are some tips for using your oils and oil-infused products every day …
  • Have your oils and supplements OUT and visible. If they are stored deep in a cluttered drawer they will be out of sight, out of mind. Keep them on a stand, a shelf, on a counter, wherever you will SEE them and use them.
  • Label and/or organize your oils. Group them in similar colors or organize them alphabetically. You could even set them apart based on certain needs you have.
  • Make rollers. Rollers provide a quick, convenient way to dilute your oils and have them ready for application whenever you or your family has a need.
  • Pair your oils with other daily activities you’re already accustomed to. Set a roller by your toothbrush so you apply it every morning. Have a bottle of oil and a carafe of water sitting next to your diffuser on your bedside table so you don’t forget to diffuse at bedtime. Set rollers or sprays near the backdoor where you store your shoes or purse and use them on your way out.

Before you kick back and relax tonight, do yourself a favor and whip up this delicious spiced golden milk. It blends YL’s Golden Turmeric and two delicious essential oils.
Did you know? Golden Turmeric combines the benefits of high-quality turmeric and prebiotics to support your body’s natural response to inflammation, immune response, joint health, mobility, and recovery after exercise. The water-dispersible formula makes it 24 times more bioavailable than standard turmeric extracts. How awesome is that?! Oh - and the two Vitality oils in this drink - Cardamom Vitality and Cinnamon Bark Vitality - they’re amazing, too! Cardamom Vitality may support a healthy digestive system and gastrointestinal function. Cinnamon Bark Vitality contains antioxidants and may provide immune and general wellness support. Clearly this drink is a good recipe to keep on hand!

Huge, global-sized news: For the first time ever, Young Living will have a farm in Japan! Their newest farm is located on the island of Okinawa and specializes in the cultivation of shell ginger, long used in traditional Okinawan medicine. The Okinawa Farm lies at the foot of subtropical mountains within an untouched, pristine landscape filled with incredible biodiversity and unrivaled, high-quality soil. At the heart of the Okinawa Farm’s operations is Dr. Je Tae Woo, a leading researcher in shell ginger. Okinawa is a blue zone - an area where the average population lives for an unusually long time. Dr. Woo will be the head of a planned research laboratory to fully explore the potential of shell ginger and its proposed connection to the extraordinary well-being of the Okinawan population. What an exciting opportunity to explore this unique location and develop new research into the potential benefits that Young Living essential oils can offer!
